Guy Recipes: Tex-Mex Chicken

Tex Mex ChickenYou may never have a food named after you, but that doesn’t mean you can’t cook for yourself. And we’re not talking about heating up frozen burritos. We mean actual cooking. Using stuff like recipes and ovens can be daunting for some guys, which is why we’re coming up with easy-to-make guy recipes.

Like this Tex-Mex chicken, which can be prepped and served in less than 30 minutes. The ingredients are loaded with protein and vitamins, and the final product tastes great.

 

 

 

GUY RECIPE: TEX-MEX CHICKEN

Prep time: 5 minutes
Cooking time: 20 minutes

Ingredients
1 ½ cups fresh, all natural, chunky tomato salsa (use hot salsa for a kick)
½ tablespoon light brown sugar, packed
1 tablespoon Dijon-style mustard
4 boneless, skinless chicken breasts
3 cups cooked brown rice (follow package directions)
3 cups fresh green beans (ends snipped)
(If desired, add other spices to taste)

How to cook it
1. Mix salsa, sugar, and mustard in a medium-sized bowl
2. Place chicken in a 2-quart shallow baking dish
3. Pour salsa mixture over chicken
4. Bake at 400°F for 20 minutes (or longer, if needed)
5. Serve with rice and green beans
