JAMAICAN JERK RUB
You can buy jerk marinades in the supermarket, and when you do, you are throwing your money away. Real jerk seasoning is a blend of crushed spices, not some soupy, underpowered bullshit in a bottle.
2 teaspoons sugar
1 teaspoon each of onion powder, thyme, allspice, black pepper
½ teaspoon salt
¼ teaspoon each of ground nutmeg and clove
Because ground spice berries like nutmeg and clove lose potency over time, this rub should not be prepped more than a day in advance. Make this in small quantities as needed and rub it on about ½ an hour before cooking.
