Way back in the early 1900s, a man in Guadalajara walked to his favorite torta cart for his favorite sandwich- crusty bread with a spongy center enveloping juicy marinated pork sausage fried crispy on the outside and garnished with onions. The vendor, distracted by the hustle of the lunch time rush, dropped the entire sandwich in a vat of salsa.

From then on, the torta ahogada, literally “drowned sandwich”, became a thing. This local go-to meal for head colds and hangovers is full of grease and carbs. Doctors will offer the explanation that carbs converted to sugar help restore glucose levels, but everybody knows it’s just the bread and grease soaking up the alcohol.
