There are actual cricket farms where they are grown, milled, and made into a fine grain powder. Whole crickets are used to make the flour and are excellent in baked goods, but because of their high protein content, they are blended with coconut flour, tapioca flour, or other gluten-free flours. It takes about 5,050 crickets to make a pound of flour.
